Fermented in small open fermenters, with some whole bunches using wild yeast and hand plunged four times a day. The free run juice and pressings were barrelled separately and matured in tightly grained French oak puncheons for 12 months. Aromatic bramble jam, plums, raspberries and spice notes follow through to a rich palate with French oak adding weight, structure and complexity.

Fistfuls of plums, blackberry and dark cherry fruit ride the soft waves of spice. Red earthiness so vivid in great Hunter Shiraz adds further interest as it taps its foot to a neat beat in the background.
