Cabernet Sauvignon’s spiritual home, and perhaps its true origin, is in Bordeaux, where it tends to be blended with other varieties such as Merlot and Cabernet Franc. Australian Cab Savs are commonly made as single varietal wines, with Coonawarra and Margaret River heading most wine lovers’ lists of Cabernet regions.

The particularly complex vinification was conceived and implemented without a hitch. 47% cabernet sauvignon, 43% shiraz and 10% merlot from three different vineyards with different canopy management and site aspects, different soils, the varieties handled separately and fermented with different procedures. Oak choice and use varied significantly, the sumptuous, black-fruited blend finalised after 20+ months maturation in barrel, then matured for a further 30 months in bottle prior to release.
