Cabernet Sauvignon’s spiritual home, and perhaps its true origin, is in Bordeaux, where it tends to be blended with other varieties such as Merlot and Cabernet Franc. Australian Cab Savs are commonly made as single varietal wines, with Coonawarra and Margaret River heading most wine lovers’ lists of Cabernet regions.
A dark garnet hue sits in the glass with immediate aromas of ripe cassis and blackberry. Hints of cocoa, new oak and fir complement the juicy fruit mélange. A full-bodied entry is succeeded by a mid-palate of dark fruits and a smooth, integrated minerality. The tannins are well developed, allowing the wine to finish with length.
