It also forms part of the classic Champagne blend and is a key contributor to many of the best sparklings. Pinot makes excellent rosés too, with the variety’s delicate charms perfectly suiting this lighter style.

“The fruit for this slinky pinot noir was harvested across two picking windows, the earlier to retain acidity and brightness of fruit, a challenge in this warm vintage. The outcome is a brooding, dark fruited Pinot Noir with an elemental streak of whole-cluster herb and twig, running through the mid-palate. The stems confer some crunchy tannins, too, reining in the flavours of cherry, wood smoke and rhubarb.” Halliday Wine Companion
