This wine was pressed into barrels with 100% solids and fermented with wild yeasts. The result is an incredibly textured wine, excellent intensity and just the right amount of funk. Pulpy lemon tang, spicy honey and zippy acidity make this a really interesting food-friendly drop with great ageing potential.

"This has a delicious future ahead of it. It combines fruit and oak to excellent effect but it has an inherent complexity just itching for a bit more bottle age. It tastes of blueberry, red liquorice and black cherry, splashes dried herbs and cedarwood about, and has a perfumed water-based feel to it; it’s very much in the “Burgundian Shiraz” mould.
